The horses are on vacation for July, but we returned to the Jockey Club Members’ Stand in Happy Valley for another terrific Wine’s Link dinner paired with the grand crus of Chateau Lascombes and Chevalier Lascombes from Margaux, Bordeaux.
It was an intimate dinner for 24 great wine-lover friends, both old and new. The guest of honor was the famed négociant, Dubos’ president Robert Cottin, and the managing director of Chateau Lascombes, Dominique Befve. Our chef for the evening, Brandon Chadwick, who worked with Jean-Georges Vongerichten and of Doha W Hotel, prepared six stunning courses to match the wines of the evening. We started with an incredibly elegant Alaskan King Crab Leg Salad, followed by savory Foie Gras Brulee paired with Chevalier de Lascombes 2010 and 2013. For the third and fourth courses of Roast Masterstock Pigeon and Slow Cooked Wagyu Cheek with mushrooms, we comparatively tasted them with three vintages of Chateau Lascombes, 2005, 2010, 2013. Dominique expertly guided us through the great wines of the evening, remarking on the specificity of spice and wood in 2005, and the highly regarded 2010 and 2013 that are more full-bodied with notes of crème de cassis and a more fruit forward, rounder style, both of which scored a 96 with Robert Parker.
